Cilantro-Lime Vinagrette Dressing

One of my favorite local restaurants serves a cilantro lime vinagrette salad dressing.  I love it on my chicken fajita salad and decided to recreate it at home.

This is really easy to make and it is delicious!  This cilantro-lime dressing is great served over a garden salad, fajita salad, or on a cabbage slaw.  I love to pair this up with mexican food!

This recipe calls for a jalapeno, don’t worry, it doesn’t turn out spicy.  My kids love it and they are super sensitive to spicy foods!

Here is what you need: 

1 medium to small jalepeno pepper, seeded, and coarsely chopped, 2 cloves of garlic, 1/2 teaspoon minced fresh ginger root, 1/4 cup lime juice, 1/3 cup honey, 2 teaspoons balsamic vinegar, 1/2 teaspoon salt, 1/4 cup cilantro leaves, 1/2 cup extra-virgin olive oil

Here is what you do:

Place all of the ingredients in a food processor or blender.  Mix for about 2 minutes.  I like to chill mine in the refrigerator for a few hours before serving.
