I have this cooking in the crock pot right now, it is so easy and yummy! My husband and kids love chicken tacos and I love bulk cooking in the slow cooker. This slow cooker chicken taco recipe is easy to make for a single dinner or for multiple meals (that is what I do!).
This slow cooker chicken taco recipe provides multiple meals for our family. It is easy to double so that you can freeze the leftovers for meals on another day. I make this dish when I am expecting a crowd. It is easy to prepare the chicken and all of the condiments ahead of time so that you can serve the meal with ease when the time is right.
What you need:
16 ounces of salsa
1.25 oz taco seasoning OR make your own….see my recipe for homemade taco seasoning here
1 lime, juiced
4 tablespoons chopped fresh cilantro
3 pounds of skinless, boneless chicken
*I use organic ingredients
Here is what you do:
Here is the super easy part. Mix all of the ingredients into slow cooker and stir to combine. Cook on low 6-8 hours or high 4 hours. Your chicken will be tender and moist so it will be easy to shred the chicken with 2 forks.
Serve on a warm tortilla with all of your favorite toppings!

This is wonderful, just so happens that I have the same dinner simmering! You can eat & not feel guilty!
I HAVE to make this!! Although, I’ll have to scale it back because 3 lbs is a lot of chicken and my ridiculously tiny European freezer doesn’t hold much so that’s not an option. I’m SOOO looking forward to it, though!!!

It’s in the crock pot right now. I can’t wait (and I have to wait because it won’t be ready until tomorrow morning)!! Although instead of standard tacos I’m going to eat mine with germinated brown rice and maybe some shredded cheese and greek yogurt. Mmmmm!!

Greek yogurt has less fat (if you get the fat free) and calories than sour cream and doesn’t taste much different…especially when using it in something like this.
