Feta Stuffed Green Peppers

Yummy!!  This is a favorite of mine!  The kids aren’t too crazy about the green pepper part but they like the filling!

What you need:

2 cups water

1 cup uncooked Arborio Rice

3 green bell peppers, halve & seeded

2 tablespoons oliv oil

6 green onions, sliced

2 tsp dried basil, 2 tsp Italian seasoning, 1 tsp salt, 1 tsp pepper

1 10oz can diced tomatoes & green chilis – drained (if you don’t like the spice of this dice one tomato)

1 cup crumbled feta cheese

What you do:

Preheat oven to 400 degren F & grease a baking sheet with olive oil

In a medium saucepan, bring water to a boil. Stir in rice.  Reduce heat, cover, simmer for 20 minutes.  Remove from head & set aside.

Place peppers cut-side downnon the oiled baking sheet.  Roast 20 minutes in the preheated oven.

While the peppers are roasting, heat oil in skillet over medium to medium high heat.  Cook the onions & all seasonings for 3 minutes.  Stir in the drained can of diced tomatoes & green chilis.  Cook for 5 minutes.  Stir in the cooked rice until heated through. Stir in Feta cheese and remove from heat.  Spoon the mixture into the pepper halves.  Return peppers to oven for 10 minutes.  Serve immediately.  YUMMMM!!

NOW a great EASY side dish for this is roasted asparagus with a yummy sauce that my kids LOVE!
