I have really been wanting to make these so I gave it a shot. You can really add anything that you desire and top it with a combination of things to suit your families tastes. So here it is…tweak yours as needed!
2 cups quick cooking oats, 1 cup whole wheat flour, 1/4 cup sucanat (I use this in place of brown sugar..If you use brown sugar use 1/2 cup), 1/2 cup raisins, 1/2 cup flax seeds, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 cup olive oil, 1/4 cup applesauce, 1/2 cup honey, 1 egg, 2 teaspoons vanilla extract, 1/4 cup chocolate mini chips
In a large bowl stir together the oats, flour, sucanat, raisins, flax seeds, salt, cinnamon, chocolate chips. In a smaller bowl blend oil, applesauce, honey, egg and vanilla; pour this into the dry mixture and mix by hand until liquid is evenly distributed. Press evenly into 9×13 baking pan (I lined the pan with parchment paper)
Bake at 350 degrees F for 25 or 30 minutes or until the edges are golden.
This topping is optional but oh so yummy! I melted 1 cup of chocolate chips with 1 Tbsp of Almond milk and spread over cooked granola then sprinkled shredded coconut.
Allow to cool completely before removing from the pan then slice into bars.
