Homemade Low Fat Blue Cheese Dressing

I am slowly replacing the store-bought items in my house with homemade alternatives.  Yesterday it was blue cheese salad dressing.  My husband loves his blue cheese dressing so I was a little nervous with how this recipe would go over.

I served it last night with our salads and he really liked it!

Here is what you need:  1/2 cup low-fat buttermilk, 1/4 cup firm tofu, 3 ounces of blue cheese, 1 teaspoon of lemon juice, 3 cloves of garlic, 1/4 teaspoon sea slat, 1/8 teaspoon black pepper, 2 tablespoons low-fat cottage cheese

Here is what you do:  In your blender or food processor, mix all of the ingredients, except the cottage cheese, until it is a smooth mixture.  Pour the dressing in a bowl and fold in the cottage cheese.  Refrigerate in a covered container overnight. 

Voila!  Delicious blue cheese dressing. 

Today I will be working on fermented ketchup, wish me luck.
