Super Easy Shrimp Scampi Bake

This is a family pleaser and super easy & quick for me.  We have this at least 2 to 3 times a month.  I stock up on shrimp when I find it on sale.  Recently a friend of mine netted a bunch in the river so we have been enjoying those!

Here is what you need:  1/4 – 1/2 cup of butter , 2-3 tablespoons of chopped garlic (more or less to your desire), 1 tablespoon chopped fresh parsley, 2 tablespoons dijon-style mustard, 1 tablespoon lemon juice, 2 pounds medium raw shrimp, shelled, & deveined, parmesan cheese to your liking, 13 oz package of thin spaghetti (or whatever type of pasta you desire).

Here is what you do:  Preheat oven to 450 degrees F

Bring large pot of water to boil.  Boil your pasta for amount of time indicated on package.

Meanwhile…..

Arrange shrimp in a baking dish.

 

In a small saucepan over medium het combine & melt the butter, mustard, garlic, lemon juice, and parsley.

 

When the butter melt completely remove from heat and pour over shrimp.

Shrimp Scampi Bake

When your pasta is done drain and set aside with some oil so it doesn’t get stuck together.

Bake in preheated oven for 12-15 minutes

Once shrimp is cooked combine with cooked pasta and serve.  I garnish with parmesan cheese.

**As an added nutritional bonus for the kids I add sautéed mushrooms to their dish (I am not a huge fan of  mushrooms so I leave it out of mine)**
