Whole Wheat Banana Bread

Today I noticed a few ripe bananas on the countertop…time to make banana bread!

Last week I made almond-flour banana muffins and they were great, but today I found myself out of almond flour.  I had a really good recipe for whole wheat banana bread but it called for sugar and oil.  I decided to do a little ‘tweaking’ and ended up with a great loaf of banana bread.  I used applesauce (homemade) to replace the oil and honey to replace the sugar.

The kids loved it so much that they asked to have it for dessert.  Score!

Here is what you need:

1/2 cup applesauce, 1/2 cup honey, 1 teaspoon vanilla extract, 2 eggs, 3 mashed ripe bananas, 1 3/4 cup whole wheat flour, 1/2 teaspoon sea salt, 1 teaspoon baking soda, 1/4 cup hot water

Here is what you do:

Preheat oven to 325 degrees F.  In a large bowl mix applesauce and honey together.

I had helpers in the kitchen today!

Add the eggs and mix well.  Stir in the mashed bananas and vanilla.  Whisk in flour and salt.  Add baking soda to hot water, stir to mix, then add to batter.  Whisk until totally blended.  Spread batter into a greased 9×5 inch loaf pan.  Bake for 1 hour.  Cool on a wire rack for 1/2 hour before slicing.
